"Finca Agua Sarca is a 67-hectare farm in northern Nicaragua owned by the Albir family for over 30 years. Restored in the mid-1990s, the farm balances quality coffee production with strong environmental stewardship, dedicating nearly 11 hectares to protected native forest and biodiversity. Located near the Honduran border, it sits within a wider forest conservation area. The farm supports surrounding low-income communities, employing more than 180 people during harvest and around 25 year-round. Washed coffees are produced using only ripe cherry, careful flotation, controlled resting, and clean washing, alongside honey, natural, anaerobic, and extended processing methods.
