" Huehuetenango, Guatemala, is renowned for its high-altitude farms and ideal conditions for cultivating exceptional coffee. Small-scale farmers here grow varietals like Bourbon, Caturra, and San Ramón, processing and drying their own coffee to retain more profit. The ASIAST cooperative unites these farmers, promoting ecological practices such as terracing, shade planting, composting, and organic fertilization to combat climate change and improve quality. Through direct trade relationships, including microlot sales, ASIAST helps farmers access better markets. Contributors like Andres Pablo and Antonio Tomás exemplify this dedication, producing remarkable coffee from parcels like La Mora and Buena Vista Duraznales, showcasing Huehuetenango’s excellence."
