"Finca Noruega is a 25.2-hectare farm founded in 2017 by Los Naranjos Coffee near Apaneca, El Salvador. As part of the Renacer Project, the farm focuses on improving quality through agronomic precision, environmental care, and advanced processing. Soil studies guide nutrition programs, with manual weed control and water-conservation practices protecting the surrounding ecosystem. Harvest runs from January to March, with cherry maturity measured using Brix levels to determine the most suitable processing method. Lower Brix lots are washed or semi-washed, while higher Brix cherries are used for honey, natural, and experimental processes. Anaerobic Naturals undergo tightly controlled fermentation with constant pH and sugar monitoring before slow drying on raised beds. Extended drying times at 1,400 masl promote even moisture reduction, clean cup profiles, and excellent storage stability.."
