"German Ortiz, a founding member of Los Guácharos in Bruselas, Huila, is part of a group of quality-focused producers moving toward organic farming. They make their own fertilizers and fungicides, including “Super Magro,” a compost tea made from minerals, manure, and local microbes to boost soil health and reduce chemical use.

His farm, Finca Mi Terruño, sits at 1500 masl and spans 4 hectares, with trees of Pink Bourbon, Castillo, Caturra, and Variedad Colombia.

German recently planted Bourbon Ají, a unique, chili-colored variety thought to resist rust and possibly carry a spicy note.

He processes coffee with an initial 24-hour cherry fermentation in sealed bags, followed by 36–48 hours in plastic barrels, before washing and drying in a parabolic dryer."
