"Aldemar’s 3-hectare farm is located in La Esperanza, while his home, wet mill, and dryer are in nearby Cabeceras. He cultivates around 3,000 Pink Bourbon and 1,200 Tabi trees. With high aluminum levels in his soil, he is actively working on improvements. This Pink Bourbon lot is selectively handpicked with the help of fellow Guacharos members. The cherries undergo an initial 18-hour fermentation while sealed in bags before being de-pulped. The seeds then ferment in an open tank for 36 hours, followed by two washes and 20 days of drying. Parchment is stored in GrainPro bags to maintain 10.5% humidity"
