Stovetop Espresso

This method is for crafting strong, flavourful espresso at home using a stovetop brewer. It breaks down the process into four key steps:
1. Grinding & Measuring
- Grind Size: Use a fine grind, similar to beach sand.
- Dose: Level the basket with the rim. Do not tamp.
- Fill: Fill the chamber up to the release valve, but not over.
2. Pre-Boil
- Pre-Boil: Boil the chamber separately (without top assembly) to ensure even extraction. Brewing with cold water can lead to over-extraction thanks to the extended brew time.
3. Brewing
- Assemble & Heat: After pre-boiling, place the brew basket full of coffee into the bottom asssembly. Screw together the top and bottom assemblies. Use oven mits or a teatowel to avoid contact with the hot bottom assembly. Place back on medium heat.
- Extraction: Watch for an even and unbroken stream of espresso from the spouts. Remove from heat as soon as the espresso starts to bubble and sputter.
4. Tasting & Adjustments
- Stir Well: Mix the espresso with a spoon to avoid stratification.
- Adjust Grind: Use a finer grind for more body and intensity; a coarser grind for sweetness and brightness.
