Coffee can be decaffinated many ways, the EA process was developed in Colombia which is important as many other coffees are decaffeinated outside of their countries of origin.
The coffee first goes through a steaming process to open the pores of the seed surface layer. The caffeine is then extracted using a natural sugarcane by-product (ethyl acetate). This Process helps to maintain and even improve sweetness while still maintaining the inherent qualities of the coffees.
