Produced by Victor Herrera, this coffee is depulped four hours after being harvested, then exposed to a long period of dry anaerobic fermentation. 60 hours in total. Finally, the coffee is then sun dried on concrete patios to the ideal moisture content.
This microlot is 100% Tabi. This is a new varietal developed by ‘Federacion Nacional de Cafeteros’. This unique varietal is a cross between Timor, Bourbon + Typical. The word Tabi means ‘good’ in the Guambiano dialect.
Victor Herrera’s farm is located in Oporapa, Huila. This region borders Pitalito, largely considered one of the best coffee growing regions in Colombia.
