This 100% washed Caturra microlot from Colombia is grown by Fabian Suarez, in Gaitania, Tolima. The farm, El Despertar, sits at an elevation between 1800-1900 masl providing a slower ripening of the coffee cherry. This in turn produces a more bright and sweet fruit.
The coffee is harvested following a strict ripeness criteria, later floated and hand-sorted to remove any defects. The cherries are exposed to 30 hours of underwater fermentation before being de-pulped. Parchment is gently washed and later dried under temperature controlled conditions until ideal moisture content has been achieved.
The variety Caturra originated in Minas Gerais, Brazil. It is a natural mutation of Red Bourbon. Caturra has a higher yield and is more resistant to plant diseases than Bourbon.
